Low Cal Green Papaya Salad
Yes, I know - green papaya salad is already pretty low in calories. But, I saw room for improvement, so here is my version:
Green Papaya Salad
1 green papaya (small - or you'll be eating it for a month)
1 tsp fresh garlic - chopped
2 T fish sauce
2 T lime juice
1 pk sweet-n-low (or sweetener of your choice)
4-5 leaves fresh basil chopped
Fresh or dry cilantro to taste
3 T PB2 (PB2 is a powdered peanut butter which is extremely low calorie)
2 green onions - in slivers
Options: grape tomatoes, sliced green beans
Buy this item (I got mine on Amazon) to turn your green papaya into "noodles"
Julienne Peeler
Mix all of your ingredients and chow.
