Recipe: Pollo California

I made up a new recipe that my husband and I just love.

4 low carb (50 cal) tortillas
16 oz chicken (I grilled it then cut it up)
2/3 can chilis
1 can enchilada sauce, mild (the green kind)
8 oz onion (I pre cooked for a sweeter flavor)
2 slices Lucerne colby cheese (80 cal per slice)
Lettuce
4 T sour cream

Fill tortillas with the following ingredients (split between them): Chicken, chilis, onion and cheese

Place all into a baking dish, then pour the enchilada sauce over. Bake 400 for about 20 min (till bubbly and heated all the way through.

Top with lettuce and 2 T sour cream.

Makes 2 servings at 555cal each
