Haruni: My new shawl is complete


This surprisingly took me only 10 days to knit.

Recipe: Kim's Mexican Gumbo

1 pkg microwave Uncle Ben's Brown/Wild Rice (440cal)
1 can diced tomatoes (112.5cal)
1 can (7oz) chili's (80cal)
20oz Chicken breasts (565cal)
1 can green sauce (87.5cal)
6 oz chopped onion (54cal)
1 1/2 C corn (200cal)

Cook the chopped chicken breast with Mexican spices of your choice (cumin, coriander, garlic, oregano, etc.). Add everything else and cook till the rice soaks up the sauce.

Makes 4 servings - 385cal each

Top with low cal sour cream, cheese and salsa

Recipe: Crunchy Broccoli Salad (like Whole Foods)

32 oz broccoli florets
9oz onion (mild)
6T low cal mayo
6T low cal sour cream
1 pkt sweet n low
1 T Rice Vinegar
1 Apple, chopped small
3 slices bacon (cut small and cooks till almost crunchy)
42 almonds, chopped up

Microwave the broccoli till cooks (bright green) but still really crisp, then cool in the fridge. Cut the apple small. Cut the onion into small slices. Cook the bacon pieces - save the grease. Pour the bacon grease over the cold broccoli and stir till coated. Add everything else and mix well. Add S&P and garlic powder to taste.

Makes 4 servings - 320 cal per serving.

Recipe: Sloppy Joes

1 lb lean Beef (560cal)
1/2 small onion
1 green pepper
1 can tomato sauce (140cal)
6T sugar free ketchup (60cal)
1 T vinegar
1 1/2 t. Worcestershire Sauce (10cal)
Mustard to taste
Garlic powder to taste
S&P to taste

Cook till thick.

Serve on low carb bread.

Recipe: Tortilla Casserole

2 - 7oz cans mild Chili's (I like the roasted ones) (160cal)
14.5 oz can chopped tomatoes (87.5cal)
15oz can white beans (385cal)
1/2 C cheese or to total calories (240cal)
16oz lean ground beef (560cal)
3oz tortilla chips - make into crumbs (420cal)
5oz onions (45cal)
Spices: garlic powder, cilantro, cumin, coriander, oregano, s&p

Cook beef, onions and spices to taste. Add beans, chili's, tomatoes - cook briefly. Remove 1/2 of mixture from the pan - spread rest in pan evenly. Sprinkle tortilla chip crumbs evenly in the pan. Sprinkle removed mixture back on top, evenly. Place cheese on top. Put a lid on, and cook on low until all moisture is gone, and the cheese is melted.

Serves 4 (475cal)

Top with sour cream and salsa
